Fantasy for a beginner

I've recently been writing fantasy and I came to the sad realization that most of the fantasy I read is young adult. I can probably count all the adult fantasy books I've read in the last five years on both hands (they include: Lord of the Rings, two Walter Moers novels, The Princess Bride, Neverwhere by Neil Gaiman, The Book of Lost Things by John Connolly -- and I enjoyed all of them!). When I was 13 or so, I enjoyed Deborah Chester (The Sword, The Ring, and The Chalice) and a few Pern novels by Anne McCaffrey. I blame them for my inability to write anything other than fantasy.

Anyways, I thought, 'Hm, I should read more fantasy to see what's up' but I'm totally intimidated because there are so many books and some of them are really thick. So I come to you, my friends :)

I'd like some epic fantasies since that's kind of what I'm writing, but maybe ones that are more fast-paced than slow. Something that doesn't involve six 900-page books, though I wouldn't mind a few trilogies. There are a few authors I keep stumbling on - Tamora Pierce, Mercedes Lackey - but they have like 50 books and I don't know which would be a good "primer."

So, any ideas what I might enjoy? :)

ETA: Thank you guys so much! Loving all the recs!
